- Co-responsible for the smooth running of the entire kitchen area of all ships and the associated administrative tasks.
- Continuous improvement of workflow and standards, including input to update manuals, training and regulations.
- Contributing to the development of new recipes, menus, training and workflows, as well as checking, ensuring and implementing the specified recipes and standards in the area of responsibility.
- Checking and forwarding food, beverage and hotel store orders for the work area according to given budgets and other specifications.
- If necessary, planning, organization and implementation of special events (theme evenings, charter trips, etc.).
- As part of the pre-opening, additional tasks are to be taken on when taking over the ship, during shipyard periods, during outfitting and production of the cruise.
- Strict control and training of compliance with safety, environmental and hygiene guidelines (USPH/HACCP, ISM/&ISO, SQM, TUIC service standards) in the area of responsibility.
- Promotion and motivation of employees (regular objective assessment, management, assignment, instruction and training of subordinate employees with corresponding documentation).
- Travelling Executive Chef can be deployed as Executive Chef on board the fleet at short notice at any time.
Your course & your talents
What you bring on board:
- Completed, qualified training in the hotel industry / gastronomy and completed training as a chef and internationally recognized certificate, ideally with a master chef’s certificate.
- Several years of experience as Executive Chef in a large hotel, preferably on board a cruise ship.
- Very good knowledge of all input products, dishes, preparation methods and calculations, as well as a strong understanding of business management, in particular merchandise management and budget-oriented thinking; ability to understand business objectives.
- Leadership, assertiveness, flexibility and organizational skills
- Willingness to travel extensively
- Good knowledge of English and German (written and spoken).
- Knowledge of MS Office, and CrunchTime or Fidelio would be an advantage.
